INGREDIENTS:
100g of a White Baguette
3 tbsp olive oil
1 pack of Hearts of Romaine lettuce (or similar)
4 anchovy fillets (optional)
100ml Caesar Salad dressing
300g of Salmon
50g Parmesan cheese, coarsely grated

- Preheat oven to 200°C / 180°C Fan / Gas Mark 6. Cut baguette into small cubes (croutons), put on a baking tray. Sprinkle on oil and toss. Bake for 8-10 minutes or until golden. Leave to cool.
- Tear lettuce leaves into small bite sized pieces. Place small whole leaves in a bowl. If using, pat anchovy fillets with kitchen paper to absorb oil and cut into small pieces. mix with dressing.
- Break salmon into large flakes, add to salad with croutons. Add dressing and toss gently. Sprinkle on Parmesan and serve.
