Salmon Caesar Salad Print E-mail

INGREDIENTS:
100g of a White Baguette
3 tbsp olive oil
1 pack of Hearts of Romaine lettuce (or similar)
4 anchovy fillets (optional)
100ml Caesar Salad dressing
300g of Salmon
50g Parmesan cheese, coarsely grated

  1. Preheat oven to 200°C / 180°C Fan / Gas Mark 6. Cut baguette into small cubes (croutons), put on a baking tray. Sprinkle on oil and toss. Bake for 8-10 minutes or until golden. Leave to cool.
  2. Tear lettuce leaves into small bite sized pieces. Place small whole leaves in a bowl. If using, pat anchovy fillets with kitchen paper to absorb oil and cut into small pieces. mix with dressing.
  3. Break salmon into large flakes, add to salad with croutons. Add dressing and toss gently. Sprinkle on Parmesan and serve.
