INGREDIENTS:
1 Aubergine
1-2 tbsp olive oil
4 tsp red pesto
125g Buffalo Mozzarella

  1. Preheat the grill to medium. Top and tail the aubergine and cut lengthways into 1cm slices. Brush both sides of the aubergine with oil and grill until tender, turning occasionally. Leave to cool.
  2. Spread the slices with red pesto and each one in half lengthways. Cut the mozzarella into small pieces and wrap in the aubergine with the pesto side on the inside.
