INGREDIENTS:
150g butter
150g light soft brown sugar
4 tbsp clear honey
350g porridge oats (not instant oats)
50g dried blueberries
50g sultanas
50g sunflower seeds
2 small ripe bananas, peeled and mashed with a fork

  1. Preheat the oven to 190°C / 170°C Fan/ Gas Mark 5. Line a 22cm shallow square tin with baking paper. Put the butter, brown sugar and honey in a saucepan and stir over a gentle heat until the butter has melted - don't allow the mixture to boil.
  2. Remove from heat and stir in the oats, blueberries, sultanas and sunflower seeds, then add the banana. Turn into the tin and level the top. Bake for about 25 minutes.
  3. Mark into 12 pieces while warm and then leave in the tin to cool.
