INGREDIENTS:
3 chicken breast fillets
400ml hot chicken stock, made with a stock cube
4 tbsp Crunchy Peanut Butter
1 tbsp sesame oil
1 tbsp dark soy sauce
3-4 tbsp sweet chilli sauce
6 tortilla wraps
2 carrots, cut into fine shreds
6cm piece of cucumber, cut into fine shreds
3 spring onions, trimmed and shredded
75g beansprouts

- Simmer the chicken in the stock for 20 minutes. Cool in the liquid and then drain off the stock and shred the meat.
- Put the peanut butter and sesame oil in a bowl and whisk until smooth. Add the soy sauce and sweet chilli sauce.
- Divide the chicken and vegetables between the wraps and drizzle over the dressing. Roll up the wrap.
