INGREDIENTS:
3 chicken breast fillets
400ml hot chicken stock, made with a stock cube
4 tbsp Crunchy Peanut Butter
1 tbsp sesame oil
1 tbsp dark soy sauce
3-4 tbsp sweet chilli sauce
6 tortilla wraps
2 carrots, cut into fine shreds
6cm piece of cucumber, cut into fine shreds
3 spring onions, trimmed and shredded
75g beansprouts

  1. Simmer the chicken in the stock for 20 minutes. Cool in the liquid and then drain off the stock and shred the meat.
  2. Put the peanut butter and sesame oil in a bowl and whisk until smooth. Add the soy sauce and sweet chilli sauce.
  3. Divide the chicken and vegetables between the wraps and drizzle over the dressing. Roll up the wrap.
