Moroccan Lamb with Couscous Print E-mail

INGREDIENTS:
2 x 410g pack Mediteranean-style vegetable medley
400g lamb steaks
1 sachet Moroccan Reason to Season
3 tbsp sunflower oil
250g couscous
3tbsp chopped fresh coriander

  1. Preheat the oven to 220C/Gas 7. Put the vegetables in a roasting tin, drizzle over some oil and toss. Cook in the oven for 20 minutes.
  2. Coat steaks in half the spice mix. Heat 1 tablespoon of oil and quickly fry the remaining spice mix. Add the couscous and 300ml of boiling water. Remove fron the heat, cover and set aside.
  3. Heat the remaining oil in a frying pan and cook the steaks, in batches, over a medium heat, for about 2 minutes on each side. Keep warm. Stir the vegetables and coriander into the couscous. Serve with the lamb.
