Moroccan Lamb with Couscous |

INGREDIENTS:
2 x 410g pack Mediteranean-style vegetable medley
400g lamb steaks
1 sachet Moroccan Reason to Season
3 tbsp sunflower oil
250g couscous
3tbsp chopped fresh coriander

- Preheat the oven to 220C/Gas 7. Put the vegetables in a roasting tin, drizzle over some oil and toss. Cook in the oven for 20 minutes.
- Coat steaks in half the spice mix. Heat 1 tablespoon of oil and quickly fry the remaining spice mix. Add the couscous and 300ml of boiling water. Remove fron the heat, cover and set aside.
- Heat the remaining oil in a frying pan and cook the steaks, in batches, over a medium heat, for about 2 minutes on each side. Keep warm. Stir the vegetables and coriander into the couscous. Serve with the lamb.
