Tuna Spaghetti Print E-mail

INGREDIENTS:
400g spaghetti
4 spring onions, trimmed and sliced
1tbsp olive oil
2 cloves garlic, finely chopped ripe tomatoes, deseeded and chopped
400g can tuna chunks in sunflower oil, drained
2tbsp chopped flat-leaf parsley

  1. Add the spaghetti to a large pan of boiling water and boil for 11 minutes.
  2. Meanwhile, fry the sliced spring onions in the oil for 2 to 3 minutes. Add the garlic and cook for another minute. Add the chopped tomatoes and cook for a further 4 to 5 minutes. Season to taste.
  3. Add the tuna chunks to the sauce, break up slightly and allow to heat through. Drain the spaghetti and add to the sauce with the parsley, mixing well.
