INGREDIENTS:
400g spaghetti
4 spring onions, trimmed and sliced
1tbsp olive oil
2 cloves garlic, finely chopped ripe tomatoes, deseeded and chopped
400g can tuna chunks in sunflower oil, drained
2tbsp chopped flat-leaf parsley

- Add the spaghetti to a large pan of boiling water and boil for 11 minutes.
- Meanwhile, fry the sliced spring onions in the oil for 2 to 3 minutes. Add the garlic and cook for another minute. Add the chopped tomatoes and cook for a further 4 to 5 minutes. Season to taste.
- Add the tuna chunks to the sauce, break up slightly and allow to heat through. Drain the spaghetti and add to the sauce with the parsley, mixing well.
