Griddled Asparagus with Balsamic Dressing & Parmesan |

INGREDIENTS:
2tbsp extra virgin olive oil, plus a little extra for brushing
1tbsp balsamic vinegar
1/4tsp Dijon mustard
1/4tsp clear honey
125g fine asparagus spears
40g Parmesan, shaved with a vegetable peeler

- Put the olive oil, vinegar, mustard and honey in a small bowl. Season well and whisk to combine.
- Heat a griddle. Bend the stalks of asparagus until they snap and discard the tough ends. Brush lightly with olive oil and griddle until just tender.
- Serve the asparagus drizzled with balsamic dressing and topped with Parmesan.
