INGREDIENTS:
2tbsp extra virgin olive oil, plus a little extra for brushing
1tbsp balsamic vinegar
1/4tsp Dijon mustard
1/4tsp clear honey
125g fine asparagus spears
40g Parmesan, shaved with a vegetable peeler

  1. Put the olive oil, vinegar, mustard and honey in a small bowl. Season well and whisk to combine.
  2. Heat a griddle. Bend the stalks of asparagus until they snap and discard the tough ends. Brush lightly with olive oil and griddle until just tender.
  3. Serve the asparagus drizzled with balsamic dressing and topped with Parmesan.
