INGREDIENTS:
1 large onion, peeled and cut into wedges
2 of each red, green and yellow peppers, de-seeded and cut into thick strips
4tbsp olive oil
2tbsp lemon juice
35g packet Cajun seasoning
8 Mexican wraps, soured cream, salsa and guacamole to serve

- Place the onion, peppers, oil and lemon juice in a non-metallic dish. Mix well to coat, then sprinkle with the Cajun seasoning and mix again. Cover and leave to marinate for 1 hour at room temperature or marinate for longer or overnight in the fridge.
- Perheat a barbecue or grill to a medium-high heat, Thread the vegetables onto 4 large skewers. Place on the barbecue or a foil-lined grill pan. Cook for 15-20 minutes, brushing with the remaining marinade and turning once or twice until slightly charred.
- Remove from skewers and serve straight away with wraps, soured cream, salsa and guacamole.
