Chicken Fajita Kebabs Print E-mail

INGREDIENTS:
3 tbsp olive oil
1 sachet of Mexican seasoning
4 chicken breast fillets
3 mixed peppers, deseeded
1 red onion
2 limes, cut in wedges
8 Tortillas
170g guacamole
200g Salsa

  1. Mix the oil with the seasoning. Cut the chicken, peppers and onion into equal sized pieces and coat in the marinade. Leave for at least an hour, turning occasionally. Soak 4 wooden skewers in cold water.
  2. Thread the chicken, vegetables and lime onto the skewers and barbeque, turning occasionally, for 10-12 minutes, until the chicken is cooked.
  3. Heat the tortillas on the barbeque for a minute, then spread with the guacamole and salsa and divide the chicken and vegetables between the wraps. Roll up and serve.
